This is my favourite Rice dish that I am only recently got from my Mum!  The Rice is cooked in a way that you feel each grain in your mouth before you bite into it, and it has uneven distribution of taste from the whole Spices that just make each mouthful a welcome surprise.

Equipment

  • deep pan

Ingredients
  

  • 180 g Long grain rice Preferably use a quality brand like Basmati
  • 300 ml Water Use enough water to submerge the Rice
  • 1 Onion Small. Chopped - not too finely.
  • 100 g Vegetables Frozen vegetables cook easily in this dish: Carrots, Peas and Beans work well.
  • 2 tbsp Oil
  • 0.5 Green chillii Optional: Finely chopped
  • 20 g Ginger Optional: Fresh and grated or 1tsp per 20g.

Spices & Herbs

  • 1 tsp Cloves Whole
  • 0.5 tsp Cumin Whole
  • 1 tsp Black pepper Whole
  • 1 tsp Salt Add to taste

Instructions
 

Cook the Rice

  • Bring the Water to boil. Add the Rice and continue boiling for about another 5 minutes. Take the Rice while they are still firm.
  • In a strainer, pour cold water over the Rice to cool it down.

Stir fry

  • Heat the Onion on high heat (we don't want them to get soft).
  • Add the Spices and Salt
  • Add optional Ginger and Chillies.
  • Add the (frozen) Vegetables.
  • Continue heating and stirring while on high heat.
  • Cook for approx 5 minutes. Ideally keep cooking until you notice that Onion mix becomes water-y
  • Add & Stir in the Rice
  • It's ready to eat
