Daal Rice Kichdi!

Favored among practitioners of Ayurveda (science of health), I know if someone from the family is ill then my Mum will be in the kitchen cooking this healing recipe before you can say “Kichdi!”. It’s comforting and full of goodness and it can easily be adapted to you suit your tastes and needs.  Substitute the vegetables for the ones that work for you and also adjust for the seasons. What’s also good is that it’s very easy to make – It’s a simple and quick one pot stew.  The only down side is that it is not the prettiest of dishes.  It does have a purpose which is remembered at certain times and for certain groups of people: When you are not feeling well, Feel like some comfort food. If you are time poor, for inexperienced cooks.  This dish can be a great suggestion for students since they can often tick more than one of these boxes at any given time.

Equipment

  • deep pan
  • Long handle wooden spoon

Ingredients
  

Spices & Herbs

  • 1/2 tbsp Salt Add to preference.
  • 1 tsp Turmeric
  • 0.5 tsp Cumin
  • 0.5 tsp Gharam masala
  • 0.25 tsp Black pepper
  • 1 tsp Ginger powder or use 15g fresh ginger

Oils & fats

  • 25 grams Ghee

Fresh vegetables

  • 120 grams Brocolli Quartered
  • 180 grams carrots Diced.
  • 1 Onion Medium size, Finely chopped.
  • 1 Chilli Finely chopped. Add to preference.
  • 4 sprigs Fresh Coriander Optional. Chopped.

Rice, Grains and Pulses

  • 220 grams Red lentils
  • 110 grams White long grain rice

Non commercial

  • 1.4 litre Water

Instructions
 

  • Rinse the Lentils & Rice (together) in warm water, pick out and discard any debris and bad lentils/Rice. Drain and repeat two more times and drain again.
  • Turn on the cooker onto a medium heat.
  • Pour the water into a large deep pan and heat until it begins to bubble.
  • Add all the ingredients!
  • Simmer for about 20 mins until Rice and lentils are cooked.
  • Garnish with the Fresh Coriander and Enjoy!
