Carrot fudge

This is one of the most popular Punjabi desserts and it's not hard to understand why. It's sweet and smooth with crunchy bits of nut and chewy sultanas. And as far as desserts go, it's quite healthy!

- 2 kg carrots Grated
- 0.5 Cup Milk
- 275 grams Brown sugar
- 275 Grams Milk powder
- 75 grams Sultanas
- 150 grams Almond
- 1 tbsp Butter
- 4 Green cardamom Use the seeds only.
- 4 Cloves Whole.
- 100 grams Pistachios Crushed
Put the milk to boil, when it's hot, add the butter
Add the Cardamom and Cloves.
Add the carrots, simmer until they are soft (don't boil), then add the coconut powder
Chop the almonds into small pieces and add them to the mixture
Add the sugar and mix well
Simmer until all the liquid has evaporated, then add the milk powder
