DescriptionGinger has long been hailed and used to improve health in India, to cure stomach disorders, for losing weight, reducing inflammation and much more. When Ginger is dehydrated, one of its compounds, gingerol, is reduced, but curiously increasing the levels of other compounds like shaogol which actually has similar benefits to gingerol. End result you still get the health benefits like anti-inflammatory properties and consequently the taste is more pungent (spicy) and less nuanced. So dried ginger won't have flavor notes of the fresh ginger but it does have the health benefits. Approx 1 tablespoon of grated fresh ginger is equal to 1/8 teaspoon of ground ginger. Works well in sweet and savory recipes, use it to add pungency and equally use it to make homemade teas and remedies to make the best use of its health benefits.
