Gourds are not pretty and they have an acquired taste. So why bother at all? It’s because they are very nutritious with twice the amount of calcium as spinach, it’s good for the heart, cholesterol, losing weight and much more!

Ingredients
  

  • 1 Gourd
  • 1 Cucumber Cut into 1cm chunks.
  • 4 Tomatoes
  • 3 tbsp Olive oil
  • 0.5k tsp Salt
  • 0.5 tsp Black pepper

Instructions
 

  • Wash, Trim the edges of both the bitter gourd and the cucumber
  • Chop up the gourd, cucumber and tomatoes in chunks.
  • Add all the ingredients into a large bowl.
  • Add the Salt and Pepper.
  • Mix together so the spice and herbs are evenly coated.
  • Add the oil and mix again.
